We make our own white chocolate. That's unusual, and it's the reason ours doesn't taste like the waxy stuff you're thinking of — it's built with real cocoa butter and sunflower lecithin rather than bought in by the sack.
It's also the best canvas we have. White chocolate takes coloured cocoa butter better than anything else, which is why the most striking hand-painted bonbons in the shop tend to be white chocolate underneath. A white chocolate box is the one people photograph.
